My Bread and Ingredients

All my loaves are sourdough unless stated, that is, produced using a natural wheat or rye leaven rather than by using added yeast. All breads are made by hand and slowly fermented for maximum flavour, nutrition and digestibility.

Unlike most commercial bread, my bread is made with only flour, water and sea salt (all other ingredients are stated) and without hidden additives such as added enzymes and improvers.

These days bread made without the use of processing aids or any other artificial additives is defined as ‘Real Bread’. If you have found commercial bread difficult to tolerate, try ‘real’ bread, it could just be modern production techniques that are the problem.

All my breads are made with organic flour as locally produced as possible.
  • Untreated stoneground wheat flours are from Maud Fosters Mill, Boston, Lincolnshire or Shipton Mill in Gloucestershire.
  • Wholegrain rye flour is from Foster's Mill, Swaffham Prior (milled from grain from Hammonds End farm, Harpenden), Dove's farm organic wholegrain rye flour or Shipton Mill organic wholegrain rye.
All other ingredients are organic or fair trade and locally sourced where this is possible.
Salt levels in my breads are generally 1% or slightly below, in line with Food Standard Agency (FSA) targets.  http://www.sustainweb.org/realbread/salt_in_bread/#how_much_salt

Borodinsky (100% black rye bread)

The story goes that this rye bread was first made by the wife of a Russian general, using coriander seeds ripening in the September sun, to encourage the troops on the eve of the battle of Borodino. Borodinsky thus acquired a heroic status amongst breads as it became associated with their victory over Napoleon.

All 100% rye breads are made without added wheat and avoiding conract with wheat flour, so are suitable for wheat free diets but as they are made in a kitchen where wheat bread is made they can NOT be guaranteed as GLUTEN FREE

Please note: The rather confusing convention is that where a percentage of flour is given, the figure relates to its proportion of all the flours in a recipe, whilst percentages of other ingredients relate to their proportion in the whole recipe.
